THE PROCESS
We begin with Saccharomyces cerevisiae, a single-cell organism with a naturally complete amino acid profile. The strain is selected for its high protein yield and clean fermentation behaviour, with no genetic modification.
The yeast is cultivated in a closed, sterile bioreactor, no soil, no pesticides, no heavy metal accumulation pathways. Temperature, pH, and nutrient inputs are controlled to maximise protein density and digestibility.
Cell walls are removed through enzymatic processing, leaving only the pure protein fraction. The result is a 80%+ protein isolate with a PDCAAS of 1.0, equivalent to whey without a single animal-derived ingredient.
